This isn't that important, but I'm pretty proud of myself. I know I'm just patting my own back and it's far from humble. Oh well. My mother's birthday was this past Monday and we decided to celebrate this Saturday with a family dinner. She has my brother coming to barbecue steaks (likely tri-tip) since he likes to barbecue and she asked me to "just make something fantastic." So, true to form (toot toot), I whipped up a neufchatel that will be aged one week this Saturday and just finished some fresh mozzarella bocconcini that I have set in a brine with olive oil and basil which I will be putting into a caprese salad. I'll take real photos later (the photo above isn't actually my salad). But in all fairness, I am the only person that I know personally that can make his own neufchatel and mozzarella for caprese salad.
Also note that I realize that I don't have a very good theme here if neufchatel if French and mozzarella is Italian. They're both cheese. That's tasty and reason enough for me.
