30-Day Beer Challenge: Day 12 - Natural "Natty" Ice Biscuits and Gravy

Today marks the beginning of 7 awful beers. I originally wanted to get Keystone Light, but they didn't carry that in the big cans. In fact, almost everywhere I went only carried 12-packs as their smallest size and I definitely did NOT want 12 of these in my home. After looking at four different stores, I decided it didn't matter. The last store I was in had Natural Ice in a large can. I bought it.

I thought biscuits and gravy would be something that would unlikely be ruined by cheap beer, so I gave it a go. Here is the recipe.

Ingredients:

Biscuits:
2 cups white flour
1 tsp sugar
1 tbsp baking powder
1 tsp salt
1 cup butter (cold, cubed)
1/2 cup milk
1/4 cup Natural Ice
5-6 Strips of Bacon (Cut into small squares)

Gravy:
1 cup Natural Ice
1/2 pound sausage
1 tbsp butter
3 tbsp flour
1 3/4 cups milk
1/8 tsp salt
1/2 tsp pepper

Directions:

Cook the bacon bits until crispy.

In a mixing bowl or food processor, combine the salt, baking powder, sugar and flour for the biscuits. Cut in the cold butter until it looks like granules. My food processor made this way easier. In a mixing bowl, stir in the milk, beer and bacon from the biscuit ingredient list. Stir until an even consistency.

Flour a cutting board and carefully roll out the biscuit dough while dusting the dough with flour as needed. When flattened out to about 1/4 - 1/2 inch thick, use a biscuit cutter to cut out biscuits. (I actually use a round cheese mold that I made out of a tin can with both ends cut off.)

Preheat the over to 450 degrees F and back on parchment paper or a greased baking sheet for 15 minutes or until golden.

For the gravy, pour 1 cup of Natural Ice into a pan. Break the sausage into bite-sized clumps and heat on high. Cook the sausage on high until almost all of the beer has cooked off, then reduce to medium heat. In another mixing bowl, add the milk and whisk in the flour, salt and pepper until there is no clumping. Add mixture to the pan with the sausage, add butter and cook on medium heat until gravy thickens.

Put some biscuits on a plate and slather with gravy. Enjoy the ecstasy.

Tasting Notes:

The two big things here are the bacon biscuits and the beer added to the sausage.

The beer in the biscuits isn't necessary in my opinion after tasting these. However, the bacon biscuits turned out so good overall, that I have decided to add the recipe on it's own to the blog later and change it slightly. Tasting the biscuits alone, I think they would go from amazing to god-like simply by adding grated cheddar cheese to the recipe.

The beer in the sausage adds something to the taste that I think most gravy can't do without. Aside from the beer, the gravy recipe really is simple, but the beer just gives that extra little twist.

As far as my own tastes are concerned, I hit this one out of the park. I'm giving it a 10 out of 10 on my own scale and this will be a definite recurrence in my house.
