I usually like to slow smoke my ribs. I wanted to try something different and I needed a way to incorporate the beer. In my opinion, the only way to do ribs right is to spend some time on them. I decided to go the slow cook route with a crock pot for this recipe.
1-2 bottles Killian's Irish Red
1 rack of pork baby back ribs
1 tsp dried rosemary
1/2 tsp dried basil
4 cloves garlic (thinly sliced)
seasoned salt
The process is time consuming, but easy. First cut the rack into pieces of about 3-4 ribs each. Put ribs into a crock pot. Add 1-2 bottles of beer, rosemary, basil and garlic. Cook on high setting for about 2 hours.
After 2 hours, remove ribs from the crock pot and place on a broiler pan with the meat facing up. Preheat over to 450 degrees F. Pour about 3 tbsp of the broth from the crock pot over each piece of the rack taking care not to flood the broiler pan. Sprinkle seasoned salt over the ribs. Very carefully place the broiler pan in the oven and bake for about 20 minutes or until meat has begun to crisp slightly on the top.
I guess the main thing that I have to say is that I ate the entire rack in one sitting. I'm not joking. While I'll still likely smoke my ribs once in a while when I want a more simple flavor, the beer step in this recipe really takes the ribs to another level. 8 out of 10.
