30-Day Beer Challenge: Day 28 - Anderson Valley Summer Solstice Cornbread

Summer Solstice is my second foray into brews by Anderson Valley. This beer was recommended to me and I thought to give it a try. It's a lighter beer and sweet. Cornbread came to mind and the idea was born.

Ingredients:

1 cup Anderson Valley Summer Solstice
1/2 cup butter (melted)
2/3 cup sugar
2 eggs
1 2/3 cups flour
2/3 cup cornmeal
1 tbsp baking powder
1/2 teaspoon salt

Directions:

In a mixing bowl, combine flour, sugar, cornmeal, baking powder and salt. Slowly mix in beer and then melted butter. Poor into bread pan and bake in oven preheated to 400 degrees F for about 25 minutes (until lightly golden brown on top).

Tasting Notes:

Fluffy, sweet and goodness. This turned out great and was perfect with honey on top. And this recipe is so easy. 8 out of 10. This will be awesome with my leftover chili from day 27.
