I have to start of by mentioning that I was very disappointed when I went to get the ingredients for this recipe. I REALLY wanted to do it with roma tomatoes, but the grocery store didn't have any. This was annoying. I considered going to another store and looking, but honestly, I didn't feel like driving around anymore. Instead I grabbed some hot house tomatoes and just made do. I'm going to list the ingredients as if I had actually used roma tomatoes.
8 roma tomatoes
1 bunch fresh basil
fresh mozzarella
olive oil
balsamic vinegar
Cut the tops off of the roma tomatoes and hollow them out. Drop in a few pieces of fresh mozzarella. Sprinkle some salt on top. Shred a few leaves of basil and sprinkle some shred of fresh basil on top. Add a splash of oil and vinegar.
Serve!
I love caprese because it's so quick and easy, but tastes like something super fancy. The hardest part of this entire recipe is hollowing out the tomatoes and, honestly, it isn't that tough nor time consuming. I would rate this recipe as easy.
