I wanted some sort of pastry item for this month and this is what I came up with. My first attempt was a failure so I had to change the process slightly, but the ingredients remain the same.
6-8 sheets filo paper
~10 mushrooms (white or crimini)
~4 oz cream cheese
Slice the mushrooms and saute. Preheat over to 375 degrees F.
Fold a sheet of filo paper repeatedly in half alternating directions. After about 6 folds, cut into a uniform square. Place a tbsp of cream cheese close to the middle, slightly closer to one corner. On top of the cream cheese, place a small spoonful of sauteed mushrooms. Fold the filo paper in half diagonally over the fillings. Place on a greased baking sheet.
Bake pastries for about 20 minutes (until all of the filo paper turns a light golden brown on top).
Serve.
To help with appearance and flavor, you may also brush the top of the pastry with olive oil or melted butter before baking. This is actually a particularly easy recipe. Filo paper can be found in the frozen foods section of most major grocery stores near the puff pastries (and likely near the whipped cream and desserts).
