Can't have an hors d'oeuvre challenge without crostinis. Here you go.
1 baguette
10 strips bacon (chopped)
~6 oz grated cheddar cheese
olive oil
black pepper
Preheat over to 375 degrees F.
Pour about 4 tbsp of olive oil on a baking sheet. Cut the baguette into thin bread "chips". Wipe each piece of bread in the olive oil to lightly coat each side with oil. As you work your way through the baguette pieces, add more olive oil as needed. Place each chip on the same baking tray making one layer of bread pieces on the tray. Bake for about 12 minutes, or until all of the crostinis are nice and crispy. Check regularly to avoid browning or burning the crostinis.
In a pan, heat the chopped bacon on high seasoning with a liberal sprinkling of black pepper. Cook until brown and crispy, then remove from heat. Drain the bacon fat (into a can for use later in other recipes).
After the crostinis are ready, remove from oven. Carefully sprinkle a small portion of grated cheese on each crostini. Carefully sprinkle some of your bacon pieces onto each crostini. Return to the oven for 30 seconds to a minute until cheese is melted.
Serve.
This reminded me a lot of potato skins without the hassle of baking and then hollowing the potatoes. It's an easy recipe and quite tasty. I would recommend maybe even serving with sour cream so people could add a small dollop.
