Not sure quite where I was planning on going with this one, but it did turn out pretty tasty, so here we go.
1/2 cup maple syrup syrup
~1/4 cup chopped pecans
1 1/2 cups all-purpose flour
1/4 cup sugar
1 egg
1/2 cup milk
1/2 cup butter (melted)
2 tsp baking powder
1/2 tsp salt
Makes about 24
Preheat over to 400 degrees F.
Beat the egg in a large mixing bowl, add the syrup, milk, and melted butter. In another bowl, combine flour, sugar, baking powder and salt. Slowly mix into the the bowl of liquids to avoid clumping.
Pour batter carefully into mini muffin tins. Bake for about 15 minutes (until lightly browning on top).
Remove and let cool. Serve.
Upon eating these, I was not at all disappointed. Actually, the two most disappointing parts were the fact that these are way to fatty for me to eat all of them myself and that it just seems like more of a breakfast snack than an hors d'oeuvre. I guess I fail the challenge. Oh well. My stomach still wins!
