I'm rounding up the challenge with this mini quiche recipe. I felt that no hors d'oeuvre list would be complete without mini quiche. This recipe is actually remarkably not that difficult. I sort of cheated on the crust, but I had never made a quiche crust before. I checked a recipe and it's really too simple for me to try and change it and call my own. So I'm willing to live with the fact that this recipe isn't all my own.

4 eggs
1/4 (heaping) cup chopped spinach
garlic powder
ground red pepper powder
Makes about 24
Make the quiche crust according to the directions in the link location. Then press into about 24 mini muffin molds.
Preheat oven to 400 degrees F.
Beat eggs in a bowl, then mix in chopped spinach. Add garlic powder and ground red pepper to taste. I found that there is enough salt in the crust that you don't need to add salt to the quiche filling. About 1/2 - 1 tbsp garlic powder and 1 tsp ground red pepper are probably good quantities if you are unsure of what your taste is.
Bake for 25-30 minutes. Quiche filling should be firm to the touch.
This recipe is really simple when all is said and done. It does dirty a fair amount of kitchen ware, but oh well. Plus it's so damn tasty!
