30-Day Salsa Challenge: Day 25 - Onion (Skitch)

While this was supposed to be an easy recipe, I really wanted to focus more on the onion in the salsa and not have it be a completely typical tomato-based pico. The main challenge then became, finding a way to not let the onions bite too much while staying prominent in the flavor profile.

Ingredients:

1 sweet yellow onion (chopped)
1 red onion (chopped)
1 bundle green onions (chopped)
1/4 cup cilantro (leaves, no stems, chopped)
4 roma tomatoes (chopped)
2 cups chopped cucumber
1 lime
salt
garlic powder

Directions:

Combine the first 6 ingredients in a large mixing bowl. Add the juice from the lime. Add salt and garlic powder to taste. Toss.

Notes:

The recipe above is how I originally made this salsa. I didn't use any chile pepper because I wanted to focus on the bite from the onion. Based on my own personal tastes and the end result with this salsa, I would recommend substituting either a white onion or another yellow onion for the red. The fresh onion just adds far too much bite, in my opinion. If this pico is almost what you like, but not quite there, you can also add more tomato and/or cucumber to cool the bite. For more heat, consider adding chopped jalapeno or serrano depending on your preference.
