30-Day Salsa Challenge: Day 26 - Blue Cheese (Skitch)

I'm going to tell you right up front that this is the best thing I have ever put on chips in my entire life. I could write a page about how much I love this recipe and all the reasons why, but I don't want to build any higher expectations that I already did with my opening sentence.

I went with a blue cheese guacamole for this salsa.

Ingredients:

1 cup blue cheese
4 avocados (scooped and chopped)
2 roma tomatoes (chopped)
1/2 lime

Optional: 1/2 yellow onion (chopped)

Directions:

In a large mixing bowl, add the avocado and mash until you you have a lumpy consistency, add the juice from the 1/2 lime as soon as possible to help slow the browning of the avocado. Next mix in the blue cheese. Add chopped tomatoes and season to taste with salt and garlic powder.

Reason why I Love this Recipe

Flavor: The blue cheese - avocado pairing is amazing. I'm not sure how I never knew that these went together so well. When it first occurred to me, I didn't think it a radical idea. I had just never tasted it before. I love it. This is a combination that I will have to use many times in the future in other recipes.

Simplicity: It's quick and there are so few ingredients. I made it without the onion, so I really only had to deal with the avocado and tomatoes, then toss in the rest by hand and I was done after mixing.

Crowd Pleaser: First off, I almost kept the whole batch to myself and ate all of it in one sitting. Finally, I pried myself away from the bowl and took some to my girlfriend. I also set some aside for another friend to sample. I heard nothing but fanfare in response to this salsa. In fact, in my life, I don't think anyone has ever raved about one of my salsa more than this.
